Rueben Casserole

 

28 oz jar or sauerkraut                       2 tbsp butter or margarine

½ cup chopped onion                         12 oz corned beef, cut up

¾ cup Russian dressing                      4 slices swiss cheese

 

Drain sauerkraut, rinse well, drain.  Put in 2 ½ quart (3L) casserole.  Heat butter in medium sauce pan.  Saute onions until soft.  Add corned beef and dressing to onions.  Stir together.  Spoon over sauerkraut then layer cheese over top.  Bake uncovered in 350oF oven for 30 minutes until heated through.  Serves 4.  Serve with rye bread.  If you don’t think you like sauerkraut … try this.
