Barbecue Salmon

  • 1 cup salt
  • 1 1/2 cups sugar
  • 3 Tbsp. ground pepper
  • 3 bay leaves
  • 5 to 6 lb. salmon

Syrup Baste:

  • 2 tbsp. maple syrup
  • 2 Tbsp. soya sauce
  • 1/4 tsp ground ginger
  • 1/4 tsp pepper
  • 2 to 3 cloves garlic, minced

Directions

In 2 quarts of water, dissolve sugar and salt. Add pepper and bay leaves. Soak salmon in brine for 2 to 3 hours.

Stir together syrup baste. Baste salmon and put in tinfoil and cook on barbecue until done.
