Slow Cooker Beef Stew

  • 4 carrots, chopped
  • 2 potatoes, peeled & cubed
  • 1 cup sliced mushrooms
  • 1 onion, chopped
  • 3 celery stalks, chopped
  • 3 lbs cubed stewing meat
  • 1 pkg dry onion soup mix
  • 1 3/4 cups water
  • 1 can condensed mushroom soup

Directions

Place carrots, potatoes, mushrooms, onion and celery in slow cooker. Place stewing meat over vegetables. In medium bowl, combine the soup mix with the can of soup. Add water and mix together well. Pour into slow cooker over the meat and vegetables. Add water as needed so that the liquid comes just to the bottom of the meat. Cook on low setting overnight, adding more water as necessary in the morning. Allow to cook all day. ** If no time the night before, just cook on High for at least 9 hours during day. Serve with a nice French bread.
