Apple Muffins

  • 1 1/2 cups sifted all-purpose flour
  • 1/4 cup whole wheat flour
  • 3/4 tsp salt
  • 4 tsp baking powder
  • 1/4 tsp mace
  • 1/4 cup sugar
  • 1 egg
  • 1 cup milk
  • 1/2 tsp vanilla
  • 1/3 cup melted shortening or salad oil
  • 3/4 cup diced, peeled apples
  • Granulated sugar

Directions

Sift Flour; measure and sift again with salt, baking powder, mace and sugar. Combine with whole wheat flour. Beat egg; add milk, vanilla and melted shortening. Combine with dry ingredients, stirring until just moistened. Add diced apples. Fill greased muffin tins 2/3 full. Sprinkle a little granulated sugar on top of each muffin. Bake 20 to 25 minutes at 400 ° F or until done. Yield: 12 muffins.
